Stripping consists in ripping the branches of all drupes, whether ripened or unripe, using one’s hands and the help of machines that beat the plant’s branches until the fruit falls. This is the cheapest system available, but it is also the worst one. With stripping, gatherers collect fruits that have reached the right level of ripening and sour fruit, including flowers, leaves etc.
picking
Picking is a far more costly system that is carried out by manually gathering coffee fruits, selected according to how ripe they are. This is an optimal method that requires gatherers with skill and dexterity; it guarantees excellent quality harvests.
